Damper with Golden Syrup

This is an oven baked damper loaf but if you want to be traditional you can cook it over a campfire on a stick! Serve with cocky's joy (golden syrup).

Ingredients
Serves: 4
- 3 cups (375g) self-raising flour
- 90g melted butter
- 1/2 cup (125ml) milk
- 1-2 teaspoons salt
- 1/2 cup (125ml) water
- golden syrup as needed

- Preheat oven to 210 degrees C. Brush oil over baking tray.
- Sift flour and salt into a large bowl. Make a well in the centre. Combine butter, water and milk and add to flour. Stir until combined.
- Knead until smooth and form into a round-ish loaf. Score into 8 sections, 1 cm deep. Brush with milk, dust with flour and bake for 10 minutes.
- Reduce heat to 180 degrees. Bake for 15 minutes or until golden brown and sounds hollow when tapped.
- Serve with extra butter and golden syrup.

ive seen Damper bread being and was totally surprised at how easy it is to bake at home. I shall be attempting to bake Damper next week purely because I've got three loaves of wholemeal to see my broad through and since that's gone I'll be baking my very first Damper and reporting back - 23 Aug 2012 (Review from Allrecipes UK & Ireland)
