    Serves: 12 

    • Pastry
    • 2 tablespoons (40g) butter
    • 2 tablespoons (40g) sugar
    • 2 tablespoons (40ml) milk
    • 1 egg
    • 1 1/2 cups self-raising flour
    • Filling
    • 375g dates
    • 1/2 cup sugar
    • 1 cup water
    • juice of large lemon

    Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Place all ingredients for filling in saucepan and boil until thick stirring occasionally.
    2. Put aside to cool.
    3. Melt butter and sugar, add milk and well beaten egg.
    4. Mix well and add flour. (Note: if dough is too sticky to roll carefully add a little more flour.)
    5. Roll out and line shallow baking tray with half mixture. Spread with filling and cover with rest of pastry.
    6. Brush top with milk and prick pastry top with fork.
    7. Bake in preheated oven till golden brown (about 20-30 mins)

    No Oats ! Great simple recipe. I replaced water with orange juice for added zing, and chucked in a bit of cinnamon & cloves  -  14 Aug 2016


    You could double the amount of pastry for this amount of filling. Or else use left over filling for delicious spread for toast etc.  -  19 Feb 2017
