Gran's weet-bix date cake

    just a few ingredients for this choc date cake, pretty nice dessert

    Serves: 8 

    • 90 gms butter
    • 1 teaspoon bicarb soda
    • 1 cup boiling water
    • 4 weetbix crushed
    • 1 cup of dates
    • 1 cup caster sugar
    • an egg lightly beaten
    • 1 cup SR flour
    • half a cup of choc bits, chopped

    Preparation:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Soften the butter in the sun.
    2. Add bi-carb dissolved in the cup of boiling water, sugar, dates and weet-bix; mix well; stir in the egg and the SR flour. Add the choc bits.
    3. Put baking paper over the base of a lamington-type tin, then spread the mixture eveinly in the tin. Bake moderate oven (180 degrees) 30 mins.
