Coconut Snaps

    Given to me by old friend. Very crunchy and more-ish.

    Serves: 10 

    • 125g butter
    • 1 cup sugar
    • 1 egg
    • zest of one lemon
    • 1 cup self-raising flour
    • 1 cup desiccated coconut

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 200 degrees C.
    2. Line baking tray with baking paper.
    3. Cream butter and sugar. Add egg and zest and beat well. Add sifted flour and coconut.
    4. Roll into small balls and press on tray with fork.
    5. Bake for 15 minutes, until golden.

    Oh yum I make these from my mum's recipe which just added vanilla and lacked the lemon, but it had the cherries and my mum always used to give me a glacé cherry my mum called them melting moments, probably because that's how quickly they were gone!  -  13 Feb 2014  (Review from Allrecipes UK & Ireland)


    Thank you for this recipe iv made it a few times now, all the family like them.
