    Given to me by old friend. Very crunchy and more-ish.

    Serves: 10 

    • 125g butter
    • 1 cup sugar
    • 1 egg
    • zest of one lemon
    • 1 cup self-raising flour
    • 1 cup desiccated coconut

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 200 degrees C.
    2. Line baking tray with baking paper.
    3. Cream butter and sugar. Add egg and zest and beat well. Add sifted flour and coconut.
    4. Roll into small balls and press on tray with fork.
    5. Bake for 15 minutes, until golden.
