    Wheat, gluten and nut free

    Ingredients
    Serves: 20 

    • 115 grams butter
    • 50 grams sugar
    • 75 grams brown sugar
    • 1 egg (beaten)
    • ½ tsp vanilla essence
    • 165 grams rice flour
    • 2 TBLsp cocoa powder
    • 2 tsp instant coffee
    • ½ tsp baking soda
    • ½ tsp baking powder
    • 100g white chocolate buttons
    • 100g dark chocolate buttons

    Directions

    1. Line baking sheets with baking paper
    2. Put butter, white sugar and brown sugar in a large mixing bowl, and beat until smooth.
    3. Slowly beat in egg and vanilla. It may curdle slightly, but that is normal.
    4. Add sifted dry ingredients, and mix until combined.
    5. Gently fold in chocolate buttons.
    6. Spoon mixture onto baking trays, allowing plenty of room for biscuits to spread.
    7. Bake for 12 minutes at 180 degrees.
    8. Allow to cool slightly before removing from the tray.
