    Have three times the fun with this east biscuit recipe. Make Choc Chip, Apricot & Coconut & Cashew Nut Biscuits or add your favorites. Sultanas? Macadamia? White Chocolate? Anything that takes your fancy. *Refrigerating the dough overnight helps the dough be very forgiving and pliable when rolling out.

    Serves: 20 

    • Biscuit Dough
    • 50g unsalted butter
    • 2 eggs
    • 120ml milk
    • 1tsp baking powder
    • 2 tbs honey
    • 2 tbs caster sugar
    • 2½ cups plain flour
    • My 3 additions
    • 50g chocolate chips
    • 30g chopped dried apricots
    • 2 tbs shredded coconut
    • 30g chopped unsalted cashews

    Preparation:1hour  ›  Cook:36min  ›  Ready in:1hour36min 

    1. Mix butter, honey, caster sugar, eggs & milk in a bowl. Whisk till smooth & creamy.
    2. Sieve into mix 2½ cups of flour & baking powder to form a dough.
    3. Divide dough into 3 balls & refrigerate overnight wrapped in cling wrap.
    4. Preheat oven to 160 degrees C fan forced.
    5. Line a baking tray with baking paper a spray on canola.
    6. Take Ball 1 from fridge unwrap and place onto lightly floured surface.
    7. Flatten out with you hand & cover with chocolate chips.
    8. Work dough back into ball, then roll out thin around 2mm.
    9. Using a 5cm round biscuit cutter cut dough and place on prepared backing tray.
    10. Slide tray into oven on middle rack: bake for 12 minutes.
    11. Repeat steps with Ball 2, replacing chocolate with apricots & coconut.
    12. Repeat with Ball 3 using cashews.
