This has been a family favourite since we were kids. We make this for every occasion and all our friends and new family members who get introduced to this keep asking for more!! Simple to make. Ideal for lunches, dinner and brunches. Pefect for Good Friday as well.
Cook packet chicken noodle soup in 1 cup water for 3 mins. Drain tin of tuna, mash any large chunks and add to chicken noodle soup.
Melt butter, stir in flour to form a paste. A little at a time, add milk to make a white sauce. Stir over low heat until thick. Add curry powder. Mix into tuna mixture.
Grease a medium size casserole dish. Start with a layer of rice then a layer of tuna mixture. Alternate again with another layer of rice then the rest of the tuna. Sprinkle top with breadcrumbs and a layer of grated cheese.
I used this recipe as a base and added several more ingredients for flavour ie. lemongrass, grated carrot, peas, dill. If i had onion would also have added. Easy and fairly quick for mid week meal. - 09 Apr 2013
