Ginger Biscuits

    Here is a recipe for ginger biscuits. Although it seems long it is actually simple; with a little practice the biscuits can be made very quickly.

    Serves: 10 

    • 125g soft margarine or softened butter
    • 125g sugar preferably demerara or brown sugar - but white will do
    • 1 tablespoon (15ml) golden syrup
    • 1 egg yolk (room temperature )
    • 180g self raising flour
    • 1 teaspoon ground ginger

    1. Preheat the oven to 180 degrees C (or whatever your oven considers moderate).
    2. Weigh out and then cream the butter and sugar. They should be beaten together to have the consistency of whipped cream.
    3. Beat in the egg yolk and syrup.
    4. Weigh the flour and add the ginger to the flour. Then sieve it all together into your mixture, to make sure the ginger is evenly spread. Fold the flour gently into the mixture.
    5. Put the mixture on the tray in a walnut sized balls, then press each a little flatter with the back of a fork.
    6. Put the biscuits in the oven for about 12-17 minutes or until they are golden brown.

    The best recipes ever, i made this twice in one weekend absolutley love it, they were a huge hit, we doubled the ginger the second time and they were even better!  -  19 May 2012


    Something else. I absolutely kept to the recipe (apart from doubling the amount of ground ginger - my family likes ginger a lot) but I also pressed an oven-roasted blanched almond into the top of each biscuit before I cooked it. We all liked this addition.  -  03 May 2010


    These were really delicious - perfect with a cup of tea. I can't give them 5 stars because my parents insisted there was something missing (still haven't figured out what, though). Still, they were great and I would definately make them again.  -  03 May 2010
