    This is absolutely the best hummous I have ever had. It is great with toasted pitta bread. Add more lemon juice if the houmous tastes like it needs a lift.

    Ingredients
    Serves: 8 

    • 1 clove garlic
    • 400g tin black beans
    • 2 tablespoons water
    • 2 tablespoons lemon juice
    • 1 1/2 tablespoons tahini
    • 3/4 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon cayenne pepper
    • 1/4 teaspoon paprika
    • 10 Greek olives

    1. Place all of the ingredients except for the olives in a food processor or blender and process until smooth, scraping down the sides as needed. Add additional seasoning and liquid to taste. Garnish with paprika and Greek olives.

    Tip:

    Black turtle beans, or simply 'black beans' for short, are especially common in Latin American cuisine. High in fibre and packed with nutrients, they're a healthy addition to any dish. If you can't find tinned black beans, use dried.
