Coconut Oatmeal Cookies
I hail from the Bicol province in the Philippines where people love to eat everything with coconut milk or chilli. I haven't experimented putting chilli peppers into cookies yet but I've done a lot with coconut. Here's my coconut oatmeal cookies.
Ingredients
Serves: 10
- 1 1/4 cup (315g) softened butter or margarine
- 3/4 cup (125g) packed brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/2 cups plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup desiccated coconut

- Preheat oven to 200 degrees C and grease some cookie sheets or baking trays, or use nonstick cookie sheets.
- Beat together butter or margarine and sugars using mixer on a low level in a large bowl until creamy.
- Add egg and vanilla and beat well.
- Combine flour, baking soda and salt in a smaller bowl.
- Add flour mixture to the butter/sugar mixture and blend well. Stir in oats and desiccated coconut.
- Drop dough by rounded tablespoons onto baking trays.
- Bake 8 to 9 minutes for a chewy cookie or 10 to 11 minutes for a crisp cookie.
- Cool 1 minute on cookie sheet, then remove to wire rack. Cool completely and store in tightly covered container.

Used different ingredients. very nice biscuit i could not find my oats so used muesli instead - 07 Mar 2011
