Pea Soup A La Pressure Cooker

    An easy, non fatty, hearty soup - cheap too. I use a pressure cooker. This soup could be cooked on conventional cook top too. No bacon bone or hocks required.

    Serves: 8 

    • 1 tablespoon olive oil
    • 1 medium onion, diced
    • 1 medium carrot, finely diced (optional)
    • 1 bay leaf
    • 2 teaspoons minced garlic
    • 500g yellow split peas
    • 6 cups chicken stock
    • 1 teaspoon sea salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon lemon juice (optional)

    1. Place olive oil in pressure cooker then saute onions until soft. Stir in carrots then cook until vegetables soft and golden, stir in garlic then continue for a few more minutes.
    2. Add bay leaf, peas and stock. Lock lid on then cook on high pressure for 20 minutes. After cooking period is finished allow pressure to reduce naturally (the soup will continue to finish cooking).
    3. After all the pressure has gone, carefully lift lid. Discard bay leaf. Stir in salt, pepper and lemon juice. Taste then adjust seasoning if required.
