Vegetarian Chilli Salad Pockets

    Lettuce leaves filled with falafel, tomato, cucumber and olives with a spicy mayonnaise, each topped with a sprinkle of cheese. Use more falafels if you want.

    Serves: 4 

    • For the sauce
    • 3 Tbsp mayonnaise
    • 1 Tbsp tzatziki (optional)
    • 2 tsp Australian mustard
    • 1 tsp Tabasco
    • For the filling
    • 2 or 3 pre-made falafels, crumbled
    • 1/2 cup of cucumber - finely chopped
    • 2 ripe tomatoes - de-seeded and dried lightly with paper towel, then diced
    • 5 or 6 olives - pitted and chopped
    • about 12 - 15 whole, medium-sized iceberg lettuce leaves

    1. Mix the sauce ingredients together in a bowl and your sauce is done. Easy, look out, it packs a punch.
    2. Wash your lettuce leaves and spread them like cups on some plates. Drop some olive bits in the bottom of each cup.
    3. Add some tomato and cucumber bits, and some crumbled falafel.
    4. Spoon some spicy sauce over each salad pocket. Add a little grated cheese
    5. Enjoy. Let me know if you like.
