Welsh Rarebit with New Vegemite

This mixture can be kept in an airtight container in the fridge for up to 4 days.

Serves: 4 

  • 1tbs butter
  • 1tbs plain flour
  • 1 tbs mustard (Australian or American)
  • 1tbs new Vegemite
  • 1 cup milk
  • 1/2 cup grated cheddar
  • salt & pepper to taste
  • 8 slices of your favorite bread

Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

  1. Melt butter in small saucepan, add flour stirring until well combined. Add mustard & new vegemite. Using a whisk slowly add the milk; as mixture thickens add 1/2 the cheese. Mix over low heat until mixture is thick and cheese is melted through.
  2. Remove from heat, allow to cool 5-10 minutes.
  3. Meanwhile toast your bread and place on oven tray.
  4. Spread each slice of toast generously with rarebit mixture. Top with remaining cheese & season to taste. Place under low grill 5 minutes or until cheese is golden.
