These are great for serving at get-togethers or just as a snack. Omit beef for a vegetarian dish. Mine tend to look a little "rough around the edges", but at least they then look homemade, rather than store bought!
Once browned, and remaining curry ingredients and cook on low for around half an hour (or longer depending on how soft you like your veggies).
Remove from heat and allow to cool for a few minutes. Spoon mixture into the centre of each square of puff pastry. Fold squares diagonally, and seal by pressing the edges down with a fork. Place on a baking tray in the centre of the oven and cook for 20-25 mins, or until golden.
