Really easy to make - just needs to be done the night before/in the morning.

Serves: 8 

  • 1 punnet strawberries
  • 4 perfectly ripe peaches or nectarines
  • 1 passionfruit
  • 250g raspberries
  • 4 cups thick Greek yoghurt (optional honey flavoured)
  • brown sugar
  • demerara sugar

  1. Hull strawberries and slice. Peel and slice peaches or nectarines. Put fruit in a serving bowl with the pulp of the passionfruit and the raspberries.
  2. Spoon yoghurt onto the fruit in dollops. Sprinkle thickly with brown sugar, then with demerara sugar, completely covering the top of the yoghurt. Cover with plastic wrap and refrigerate for at least 8 hours but up to 24.
  3. You can use any fresh or stewed fruit.
