Vietnamese Spicy Chicken Wings

    These chicken wings are crispy on the outside and meltingly tender on the inside and are flavoured with layers of Vietnamese spices and soy sauce.

    Serves: 4 

    • 12 chicken wings, tips removed and wings cut in half at joint
    • 2 cloves garlic, peeled and coarsely chopped
    • 1/2 onion, cut into chunks
    • 1/4 cup (65ml) soy sauce
    • 1/4 cup (65ml) fish sauce
    • 2 tablespoons fresh lemon juice (approx one medium lemon)
    • 2 tablespoons sesame oil
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 1 tablespoon garlic powder
    • 1 tablespoon white sugar

    1. Place the chicken wings, garlic and onion into a large bowl. Pour in soy sauce, fish sauce, lemon juice and sesame oil. Season with salt, pepper, garlic powder, and sugar; toss together until well coated. Cover and refrigerate 2 hours to overnight.
    2. Preheat oven to 200 degrees C. Line a 23x33cm baking dish with aluminum foil.
    3. Remove wings from marinade, reserving extra marinade. Arrange wings in a single layer over bottom of prepared dish. Bake in preheated oven, turning once and brushing with reserved marinade, until deep, golden brown and meat juices run clear, approximately 30 minutes.

    I loved all the different flavours in these wings but it was a little bit too salty-even for me! I think next time I would omit the salt cos there is plenty already in the sauces. I also didn't use garlic powder just the fresh garlic.  -  05 Aug 2009


    Delicious and simple, this was a hit in our family! I didn't find it too salty as I use low salt soy. Served it with jasmine rice and choy sum greens.  -  19 Jan 2010


    Easy to make, although the time to make says 45mins, but this doesn't include the time taken to marinate. Meant we had them the following night and made something else instead. That said, these are probably the tastiest wings I've ever had, even my 3 year old daughter who is notoriously picky said they were "really yummy daddy". The soy/fish sauce combo worked excellently, but agree with earlier comments saying salt could have been scrapped and replaced with more sugar.  -  08 Dec 2016
