Place the chicken wings, garlic and onion into a large bowl. Pour in soy sauce, fish sauce, lemon juice and sesame oil. Season with salt, pepper, garlic powder, and sugar; toss together until well coated. Cover and refrigerate 2 hours to overnight.
Preheat oven to 200 degrees C. Line a 23x33cm baking dish with aluminum foil.
Remove wings from marinade, reserving extra marinade. Arrange wings in a single layer over bottom of prepared dish. Bake in preheated oven, turning once and brushing with reserved marinade, until deep, golden brown and meat juices run clear, approximately 30 minutes.
I loved all the different flavours in these wings but it was a little bit too salty-even for me! I think next time I would omit the salt cos there is plenty already in the sauces. I also didn't use garlic powder just the fresh garlic. - 05 Aug 2009
It tastes ok. I think I'd have enjoyed it just as much if I salted the chicken wings and placed them in the oven. Not sure what's missing to make it nicer... maybe double the sugar? Also, it's not that spicy (considering the name of the dish). I think a few chilli flakes might have made it a little more exciting.
I better confess that I only placed the wings in the fridge for about half an hour if that before putting them in the oven (instead of the 2hrs recommended). Would that have made a significant difference?!
