A light and delicious combination of corn, black beans, roasted capsicums and onion. Great either as a side dish or a salad. If you can't find tinned black beans, use dried.

Ingredients
Serves: 6 

  • 3 (400g) tins black beans, rinsed and drained
  • 4 (400g) tins corn, drained
  • 1/2 red onion, diced
  • 2 green capsicums, diced
  • 200g jar roasted red capsicums, drained and diced
  • 5 tablespoons red wine vinegar
  • 5 tablespoons olive oil

Directions

  1. In a large bowl, mix together all ingredients and toss to coat thoroughly.

Used different ingredients. Great with barbecued beef. You can also use tinned kidney or pinto beans. I like to add sliced spring onion and a pinch of chilli powder just before serving. - 29 Sep 2008

I found this recipe to be quick easy and delicious. I also found that frozen sweetcorn can be used and is equally good. - 29 Sep 2008
