    A great sweet and tangy summer salad based on cucumber, coriander and peanuts. It's great at picnics and has just a bit of heat.

    Serves: 4 

    • 3 large cucumbers, sliced (and peeled if you prefer)
    • 1 tablespoon salt
    • 1/2 cup (110g) white sugar (or to taste)
    • 1/2 cup (125ml) rice wine vinegar
    • 2 jalapenos, seeded and chopped
    • half a bunch of coriander, chopped
    • 1/2 cup (90g) chopped peanuts

    1. Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels.
    2. Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapenos, and coriander; toss to combine. Sprinkle chopped peanuts on top before serving.
