Black Bean Salad with Lime Dressing

    A healthy, fresh and colourful bean salad which includes a very tasty lime dressing. You can use almost any kind of tinned beans.

    Serves: 6 

    • 1/3 cup (80ml) fresh lime juice
    • 1/2 cup (125ml) olive oil
    • 1 clove garlic, crushed
    • 1 teaspoon salt
    • 1/8 teaspoon ground cayenne pepper
    • 2 (400g) tins black beans, rinsed and drained
    • 1 1/2 cups fresh corn kernels
    • 1 avocado, peeled, stone removed and diced
    • 1 red capsicum, seeded and chopped
    • 2 tomatoes, chopped
    • 6 spring onions, thinly sliced
    • 1 tablespoon chopped coriander (optional)

    1. Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
    2. In a salad bowl, combine beans, corn, avocado, capsicum, tomatoes, spring onions and coriander. Shake lime dressing again, and pour over the salad. Stir salad to coat vegetables and beans with dressing, and serve.

    I double this recipe easily and also added 1 tsp ground cumin and a bit of extra salt. Fresh coriander is a must, IMO. It presents beautifully and got lots of compliments! be sure to chop capsicums about the same size as the corn kernals for a confetti-like appearance.  -  01 May 2013

    Great bean salad! I added much more lime juice, more garlic, a bit more salt and reduced the oil. Plus, I did equal amounts of corn and beans. Also, to avoid "mushiness", I added the tomato and avacado very last, after mixing the dressing in with the other ingredients.
