Peanut butter and jam are a classic! This recipe takes this American kids staple and turns it into a easy slice for everybody else. I got this recipe from an American girl I used to work with. I hope you like it as much as I do!

Serves: 12 

  • 250g Butter
  • 1½ cups (330g) sugar
  • 1 tsp vanilla essence
  • 2 large eggs (beaten)
  • 2 cups (500g) peanut butter
  • 3 cups (375g) flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1½cups (500g) jam
  • 2/3 cups (125g) chopped peanuts (optional)

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Preheat oven @ 180 degrees C and grease a 23x33cm slice tin
  2. Cream butter into sugar until creamy.
  3. Beat in vanilla, eggs and peanut butter.
  4. Add flour, baking powder and salt and combine.
  5. Spread 2/3 mixture into prepared pan and cover with jam and remaining mixture.
  6. Bake for 45 minutes.
