Ellen's Pork Rashers

Adapted from a microwave recipe. Everyone loves this as the meat is so tender and tasty. Cornflour thickening gives more delicate flavour than gravy powder. Always have to make a triple or quadruple batch, so there are leftovers for later. Leftovers also freeze well and reheat easily in the microwave.
1 tblsp soy sauce
1 tblsp honey
1 tblsp sherry or green ginger wine
1/2 clove crushed garlic or 1/4 tsp minced garlic from jar

Wipe rashers with paper towel.
Place 4 sauce ingredients in slow cooker and mix lightly.
Layer pork rashers over sauce in cooker.
Cook on Low for 6 - 8 hours or High for 3 - 4 hours.
When cooked, remove meat and thicken sauce with cornflour or gravy powder.
Serve with vegetables.
Cooked this tonight and was sooo yummy. After slow cooker i finished them a few mins on the bbq with a honey/soy glaze. Melted in your mouth!

This was superb and so easy a child could do it! Melt-in-your-mouth delicious and my hubby was a little disgruntled that there were no leftovers! Will be making again and again!

Easy. Simple. Cook on High for exactly 3 hours.
You will not believe how good pork rashers can taste until you try this recipe.
