Ellen's Pork Rashers

    Adapted from a microwave recipe. Everyone loves this as the meat is so tender and tasty. I always have to make a triple batch, so there are leftovers. Leftovers freeze well and reheat easily in the microwave.

    Ingredients
    Serves: 4 

    • 500g pork belly rashers
    • 1 tablespoon soy sauce
    • 1 tablespoon honey
    • 1 tablespoon sherry or green ginger wine
    • 1 clove garlic, crushed
    • 2 tablespoons cornflour

    Directions
    Preparation:10min  ›  Cook:6hours  ›  Ready in:6hours10min 

    1. Pat pork rashers dry with paper towel.
    2. Place soy sauce, honey, sherry and garlic in a 4.5 litre slow cooker and mix lightly. Layer pork rashers over sauce in cooker.
    3. Place pork back in slow cooker and turn to coat in sauce. Serve.
    4. Cook, covered, on Low for 6-8 hours or High for 3-4 hours until pork is tender.
    5. When cooked, remove meat from sauce. Blend cornflour with 2 tablespoons water until smooth. Thicken sauce with cornflour mixture, cooking on High for 10 minutes.

    Cooked this tonight and was sooo yummy. After slow cooker i finished them a few mins on the bbq with a honey/soy glaze. Melted in your mouth!  -  19 Jan 2014

    This was superb and so easy a child could do it! Melt-in-your-mouth delicious and my hubby was a little disgruntled that there were no leftovers! Will be making again and again!  -  08 Jun 2011
