Chook and barley stew

    Adapted from a lamb stew recipe as I cannot eat red meat and turned into a yummy slow cooker recipe.

    Serves: 4 

    • 500g chicken thighs (cubed)
    • 1 medium sweet potato (small cubes)
    • 1 onion, sliced
    • 3 cloves garlic (crushed)
    • 1/2 cup pearl barley
    • 2 tsp cumin
    • 1/2 cup chicken or vegetable stock
    • 400g tin diced tomatoes

    Preparation:20min  ›  Cook:8hours  ›  Extra time:10min  ›  Ready in:8hours30min 

    1. Brown chicken, garlic and onion in a frying pan, then add to slow cooker pot
    2. Add all other ingredients, stir, put on lid and cook on low for 6-8 hours or high for 2-4 hours.
    3. Serve with rice, or, add extra barley and just have it as is - so yummy! Be sure to fiddle with the amount of cumin you add to suit your tastebuds.

    turned out really well, very taste, i used twice the amount of stock as i found the barley absorbed alot of it  -  01 Feb 2011  (Review from Allrecipes UK & Ireland)
