Making gingerbread biscuits is not that hard and is a fun cooking and decorating project for kids. Here's some quick tips to help you get the best gingerbread people, stars, trees or whatever shape gingerbread biscuits you want this Christmas.

Chill the dough before you roll it out. You'll find it is much easier to work with after it's been refrigerated for at least an hour.
Roll the dough out on a work surface lightly dusted with a mix of flour and icing sugar, or between pieces of baking paper.
If you're cutting out large or delicate shapes, roll the dough using baking paper. When you’ve cut the shapes you want, remove the leftover dough from the paper (you can re-roll it for more biscuits) and then put the paper directly on to the baking or biscuit tray.
Keep biscuit cutters from sticking to the dough by dusting them with flour.
Let gingerbread cool completely before you ice it.
A simple glaze of icing sugar and milk works well for decorating gingerbread shapes. Add a little lemon or orange essence or zest to enhance the flavour.

You can make your own coloured icing but writing icing is a big help with the fiddly bits of decoration.
Add decorations before the icing dries. Some decoration ideas include: coloured decorating sugar, 100s and 1000s, dried currants, slivered almonds, mini M&M's and other soft lollies e.g. snakes or spearmint leaves cut into different shapes.
Decorate each shape as much or as little as you want. You may want to completely ice some and stick decorations onto the icing, or to use the icing more sparingly to feature the outside of the shap e.g. stars or trees, or to make the features in a face.

Use a dob of icing to stick decorations onto un-iced gingerbread shapes.
Let decorated biscuits stand until icing sets, about 2 hours.

Gingerbread biscuits can be prepared up to 2 weeks ahead and stored in single layers between sheets of greaseproof paper in airtight containers.
